Deconstructed Pumpkin and Noodle Laksa Soup

Ingredients to make Deconstructed Pumpkin and Noodle Laksa Soup

  • A mid sized pumpkin (500 gms), chopped into small pieces
  • 2-3 chillies
  • 2 cloves of garlic
  • 1 tomato, chopped
  • 1 onion,chopped
  • 1 cup boiled wholewheat noodles
  • 1 small handful of curry leaves
  • 1 tbsp of butter
  • 1/2 cup coconut Milk
  • 1 cup vegetable stock
  • 1 tsp cumin seeds
  • Salt and pepper to taste
  • peanuts ( optional)

How to make Deconstructed Pumpkin and Noodle Laksa Soup

  1. Grind the garlic, chillies, tomato and onion together into a fine paste.
  2. Add the butter into a pan, followed by the curry leaves and cumin seeds.
  3. Add the paste and cook it well till the rawness reduced.
  4. Start adding the vegetable stock slowly and let it simmer.
  5. Add the chopped pumpkin pieces to the above mix and cook well for 15-20 minutes till they start softening.
  6. Add the coconut milk, salt and pepper.
  7. If you are adding peanuts, dry roast them and then add them now.
  8. Allow this to be cooked well for about 10 minutes in a closed pan.
  9. Pour it into a glass or bowl of your choice.
  10. Top it with the boiled wholewheat noodles and garnish with curry leaves.
  11. Serve it piping hot !

The magic is in the quality of the pumpkin you use for this, and the noodles !
