Ingredients Serving: 4

  1. Full cream milk (I opted for normal Cow milk) - 1 litre
  2. Cornflakes - 1/2 cup (50% of this is crushed, and rest used as it is)
  3. Condensed Milk - 1/3 cup
  4. Elaichi / cardamom powder - 1/2 tsp
  5. Saffron strands - few
  6. Nuts (chopped) - 2 tbsp (I used almonds and pistachios)

Instructions

  1. In a non stick / heavy duty pan, heat milk on a very low flame, and do not let it boil up.
  2. Soak saffron strands in 1 tbsp warm milk for 5 minutes, add this to the pan.
  3. After 10 minutes, when it reduces a bit, keep scraping down the cream formed on the sides and top.
  4. Add crushed cornflakes, stir and let it cook till it softens, the rabri would start thickening slightly now.
  5. After 5-7 minutes, add the condensed milk (or powdered sugar) and stir well.
  6. You can check for sweetness and adjust accordingly. Keep scraping down the cream and mix it with the now boiling milk.
  7. Add chopped nuts and cardamom powder, mix well.
  8. When it considerably thickens (it thickens quite a bit on cooling), take it off the fire and set in individual ramekins. Top with nuts if desired.
  9. Chill for at least 45 to 60 minutes. Serve.
