Ingredients to make Crunchy Canopies with toffee sauce

  • Bread slices - 6
  • Refined oil as required
  • For the sweet khoya: Milk Powder - 1 cup
  • Melted butter/ghee - 1/4 cup
  • Milk - 1/4 cup
  • sugar - 4 tbsp
  • For the toffee sauce : sugar - 1 cup
  • water 3-4 tbsp
  • cream - 1/2 cup

How to make Crunchy Canopies with toffee sauce

  1. To make the khoya, mix the milk powder, melted ghee and milk to form a paste.
  2. Heat this in microwave for 2 minutes by stirring it after every 30 seconds. Once it thickens and gives the khoya texture, add the sugar and repeat the procedure for another 2 minutes. Keep aside to cool a bit.
  3. Now cut the sides of the bread slices, and roll them with a rolling pin. Stuff the khoya inside and seal the sides using very little oil.
  4. Deep fry these canopies in refined oil. Keep aside.
  5. Make the toffee sauce: Heat the sugar and water together. Once it starts caramelising, add the cream and stir. Stir for a minute and turn off the flame.
  6. Serve the canopies with the sauce.

My Tip:

Be very careful with the toffee sauce while pouring the cream into the caramel, this is very hot and may cause burns on the skin if spilled.
