Kuzhi Paniyaram

Ingredients to make Kuzhi Paniyaram

  • Idli / dosa batter- 1.5 cups
  • mustard seeds-1/4 tsp
  • shallots chopped -1/8 cup
  • curry leaves chopped - 1 tbsp
  • Green chilies chopped - 2 tsp
  • Grated coconut - 2 tbsp
  • Sago pearls soaked in water for 20 minutes -1 tbsp
  • salt to taste
  • oil- as required

How to make Kuzhi Paniyaram

  1. Heat oil in a pan,add mustard seeds,let it splutter.
  2. Add shallots, curry leaves and green chilies.Saute until shallots turn soft.
  3. Add grated coconut and switch off the flame.Allow this mixture to cool slightly.
  4. In a mixing bowl,combine together the prepared coconut mixture,idli/dosa batter, sago and salt to tase.Mix gently until combined.
  5. Heat oil in paniyaram pan and add 2 tbsp batter into each hole and cook over medium-low heat ,until the edges turn golden brown.Turn over and cook for a minute or two.
  6. Serve with coconut chutney

My Tip:

Add 1/2 tsp finely chopped ginger to the batter for extra flavor.
