Classic Christmas pudding

Ingredients to make Classic Christmas pudding

  • 1 /2 cup flour
  • 1/2 cup breadcrumb
  • 1 cup butter
  • 3 eggs
  • 1/2 tsp lemon rind
  • A pinch of salt
  • 1/4 tsp nutmeg powder
  • 1/2 tsp cinnamon powder
  • 1/4 tsp mace powder
  • 2 tbsp dark rum
  • 2 tbsp whisky
  • 1/4 cup chopped prunes
  • 1/4 cup finely chopped candied peels
  • 1/2 cup orange juice
  • 1/4 cup blanched , peeled and chopped almonds
  • 1/4 cup cherries
  • 1/4 cup tutti - fruity
  • 1/2 cup black currants
  • 1/2 cup brown sugar
  • 1/2 cup grated carrot
  • 1/2 cup raisins
  • 1 tbsp icing sugar for sprinkling
  • Strawberries a few

How to make Classic Christmas pudding

  1. Preheat oven to 180 degree centigrade. Grease and dust a pudding mould.
  2. Sieve flour with salt, cinnamon, nutmeg and mace powder into a bowl. Add the breadcrumbs.
  3. Soak prunes, almonds, cherries, tutti fruity, raisins, in a mixture of rum and whisky.
  4. Add butter, carrot, brown sugar, black currants and candied peels to the sieved flour mixture and blend it well with an electric blender.
  5. Add each egg and blend well. Add orange juice, lemon rind, soaked nuts along with the alcohol and blend again. Add remaining egg and blend well.
  6. Pour the mixture into the greased mould and cover with an aluminium foil.
  7. Place a baking tray in the oven and fill half of it with water.
  8. Place the mould on the top and bake it for an hour at 180 degree centigrade.
  9. Cool it and de mould and sprinkle icing sugar on top. Decorate with strawberrys or any other item and serve.

My Tip:

If your pudding rises too high, just cut the top flat so that it sits well when you turn it out on to a plate.
