Ingredients to make Fruit Cocktail Sponge

  • Ingredients for Flan:
  • eggs 4
  • sugar 1 cup
  • flour 1 cup
  • Baking powder 1/2 tsp
  • Vanilla essence 1 tsp
  • Ingredients for Topping:
  • Fruit cocktail 1 tin
  • Fresh strawberries halved 5-6
  • Whipped cream 1 cup
  • Strawberry syrup to drizzle (optional)
  • Butterscotch syrup to drizzle (optional)

How to make Fruit Cocktail Sponge

  1. Beat eggs and sugar till light and creamy.
  2. Fold in flour and baking powder with vanilla essence.
  3. Pour mixture in a flan tin and bake for 15 to 20 minutes on 180 degree centigrade.
  4. Remove and cool. Soak it with fruit cocktail syrup (use the tin syrup).
  5. Cover the crust with whipped cream, add in the fruit cocktail and fresh strawberries.
  6. Add in some strawberry syrup and butterscotch syrup, to give the flan a different look.
