Watermelon & Mascarpone Parfait

Ingredients to make Watermelon & Mascarpone Parfait

  • 5 cups watermelon (diced or scooped as small balls)
  • 1+1/4 cups mascarpone cheese
  • 1/2 cup heavy cream
  • 3 tbsp sugar
  • 1/2 tsp vanilla extract
  • 1 tbsp lime juice
  • Chopped mint leaves
  • 1 tsp lime zest

How to make Watermelon & Mascarpone Parfait

  1. Take the watermelon, lime juice and chopped mint leaves in a bowl, mix and keep aside. Meanwhile beat the mascarpone cheese, sugar, heavy cream, lime zest and vanilla extract in a bowl.
  2. Spoon enough watermelon pieces to a glass and top it with the mascarpone mixture, follow it with watermelon pieces and top again with mascarpone mixture.
  3. Top the final layer with watermelon pieces and some mint leaves. Continue the same process with the remaining fruits and mascarpone mixture.
