Lemon Curd Tart

Ingredients to make Lemon Curd Tart

  • For tart shell : 50 gms cold butter
  • 100 gms all purpose flour
  • 15 gms sugar
  • 10 ml milk
  • For lemon curd :
  • 2 eggs
  • 75 gms sugar
  • Juice of 2 small lemons
  • 30 gms butter
  • 1/2 spoon lemon zest

How to make Lemon Curd Tart

  1. Mix butter in to flour. Add sugar. It should attain a breadcrumbs like texture.
  2. Add milk to this to form a dough. Keep the dough covered with cling wrap in fridge for half an hour.
  3. Take out and roll the dough between the plastic sheets.
  4. Line the tart shells with the dough.
  5. Poke the bottom of the tart shell with a knife or a fork, as while baking it should not fluff up.
  6. Bake the tarts in a preheated oven at 160 degree centigrade for 20 minutes or till golden colour is achieved.
  7. Keep out to cool on wire rack.
  8. To make lemon curd in a double boiler whisk eggs, sugar and lemon juice till it mixes well and thickens.
  9. The flame has to be on medium to low through out the process or the eggs would curdle. (Water should just bubble on sim to medium flame).
  10. Stir the mixture continuously to prevent curdling.
  11. After it thickens strain it. Add butter to this and let it melt.
  12. Add in the zest. Mix well and keep it aside to cool.
  13. Fill it in a piping bag and fill into tart shells and serve.
