Ingredients to make Microwave Pineapple Upside Down Cup Cake

  • Canned pineapple : 1 ring or chopped pineapple pcs as needed to fill the bottom of the cake bowl.
  • Shakker (powder gurd) : 2 tbsp
  • maida : 3 tbsp + 1 tbsp
  • Powder sugar : 1 tbsp
  • Unsalted butter : 2 tbsp melted
  • curd : 1 tbsp
  • baking soda a pinch
  • Tutti fruity : 2 tbsp
  • Vanilla essence : 1/2 tsp
  • Canned pineapple water : 4 tbsp or as needed to make the batter

How to make Microwave Pineapple Upside Down Cup Cake

  1. Grease and dust microwave safe plastic bowl. Keep aside.
  2. Take chopped pineapple pieces in another bowl and mix with shakker. Keep aside.
  3. In another bowl take tutti frutti and mix it with 1 tbsp maida. Set aside.
  4. Now in another bowl mix curd, sugar and vanilla essence. Mix well. Add melted butter and mix well.
  5. Add this curd mixture in the maida mix. Mix well.
  6. Add pineapple canned water to it and mix well to make a smooth but thick pouring batter. (Batter should not be very thick)
  7. Add baking soda to it and mix well. Add tutti fruity to it and mix softly.
  8. Take a greased cake bowl. Place shakker coated pineapple pieces at the bottom.
  9. Place the bowl in a microwave and micro it for 1 minute, remove the bowl from the microwave and immediately pour batter over it covering all the pineapple pieces. Do not mix it.
  10. Tap the bowl with hands so that batter should spread evenly.
  11. Now place it in the microwave. Microwave for 2 minutes. Remove it from the microwave and let it cool for 5 minutes.
  12. Invert it in a serving plate. Sprinkle some tutti frutti over it.
  13. For best taste, serve warm.

My Tip:

Instead of sugar, powdered jaggery can also be added.
