Malabar Spinach with Curds

Ingredients to make Malabar Spinach with Curds

  • Chopped Malabar spinach - 1 bunch
  • curds - 1 cup
  • salt to taste
  • Vegetable oil - 1 tsp
  • green chillies as required
  • curry leaves (small) - 10
  • For Seasoning - fenugreek seeds, Mustard seeds, Cumin seeds

How to make Malabar Spinach with Curds

  1. Heat vegetable oil in a pan.
  2. Add mustard seeds, cumin seeds and fenugreek seeds. Fry till crackling.
  3. Now add the chopped greens, green chilly and salt. Cover it with a lid and cook over low flame for 2 minutes.
  4. Take it into a bowl. Let it come to room temperature.
  5. Now take a cup of curds and stir it well. Add this to the cooked greens. Mix well.
  6. Garnish this with curry leaves and serve it with rice or chapati.

My Tip:

Note that the color of the greens doesn't change on cooking. I also used the tender stems(chopped) of the greens. You can use it as per your taste.
