Ingredients to make No Icream Cupcakes

  • To make chocolate cupcakes:
  • 1 cup all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup boiling water
  • 1/3 cup unsweetened cocoa
  • 1/2 Cup butter
  • 3/4 cup sugar
  • 1/2 teaspoon vanilla
  • 1 egg
  • For Vanilla frosting :
  • 4 cups powdered sugar
  • 8 tablespoons butter (room temperature)
  • 4 tablespoons milk
  • 1 teaspoon vanilla essence
  • Ice cream cones 10
  • Sprinklers
  • Morde chocolate melted to coat the cones 1 cup

How to make No Icream Cupcakes

  1. In medium bowl, mix flour, baking soda, salt and baking powder; set aside.
  2. In small bowl, mix boiling water and cocoa until dissolved.
  3. In large bowl, beat 1/2 cup butter with electric mixer on medium speed 30 seconds
  4. Gradually add sugar, beating well. Beat 2 more minutes
  5. Beat in vanilla and egg until blended.
  6. On low, alternatively add flour mixture and cocoa mixture, beating just until blended
  7. Divide batter among muffin cups
  8. Preheat the oven on 180 degrees for 10 minutes.
  9. Bake 20 to 25 minutes or until toothpick comes out clean. Cool 5 minutes.
  10. To make vanilla frosting:
  11. Add all ingredients into a large mixing bowl.
  12. Mix on medium speed until fully combined and frosting is fluffy.
  13. place the frosting in the refrigerator for about 15 minutes to help it set.
  14. To assemble :
  15. Temper the chocolate in microwave till it melts.
  16. Dunk the ice cream cones into it.
  17. Dip into sprinklers. Set aside on butter paper.
  18. Spread the refrigerated frosting on the top of cup cakes.
  19. Garnish with sprinklers
  20. Smash the ice cream cone down on top of the cupcake which is filled with vanilla frosting.
  21. Enjoy mess free no icecream cupcakes.
