Arroz Con Leche/Spanish Rice Pudding

Ingredients to make Arroz Con Leche/Spanish Rice Pudding

  • 2 cups of Milk
  • 1 cup rice (long grain)
  • 1/2 cup sugar
  • 2 tbsp butter
  • 1 lemon peel
  • 1 cinnamon stick
  • 1 tsp cinnamon powder

How to make Arroz Con Leche/Spanish Rice Pudding

  1. Bring 3 cups of water to boil in a large vessel, then add the rice and put the flame in simmer to cook for 10 minutes. Turn off the stove and allow the rice to sit, however don't drain the water.
  2. Meanwhile take the milk and sugar in an another vessel, heat it in a medium flame. Stir until the sugar gets dissolved.
  3. Drain the water from the rice.
  4. Once the milk starts boiling, add the drained rice, butter, cinnamon stick, lemon peel. Bring everything to boil together, then simmer and cook for 15- 20 minutes.
  5. Remove the cinnamon stick and lemon peel. Transfer the rice pudding warm topped with cinnamon powder.
  6. Allow it to cool completely and serve it warm or cold.
