ABOUT Pear Pie with Sweet Walnut Crust RECIPE

A cross between a pie and tart, this dessert is especially wonderful when served slightly warm.

Ingredients Serving: 4

  1. For the crust:
  2. A little softened butter for the pan
  3. 2 cup walnuts
  4. 1/2 cup flour
  5. 3 tsp brown sugar
  6. 1/4 teaspoon salt
  7. 1/4 teaspoon cinnamon powder
  8. 3 tsp water
  9. For the filling:
  10. 5-6 ripe pears
  11. 2 tsp flour
  12. 3/4 tsp cinnamon powder
  13. 3 tsp brown sugar
  14. Grated zest of 1 lemon
  15. 1 tsp fresh lemon juice
  16. A pinch of salt

Instructions

  1. Freeze a 9 inch pie pan with butter.
  2. Place the walnuts plus 1/4 cup of the flour in a food processor, grind well until the nuts are grounded to fine meal.
  3. Transfer this walnut mixture to a bowl and add the remaining flour along with sugar, salt and cinnamon. Mix it well with a fork.
  4. Add 1 tsp of water at a time, mix well after each addition until the dough holds together to make a pie dough.
  5. Use your hands to press the dough evenly into the buttered pie pan.
  6. Preheat the oven at 375 degrees F or 190 degrees C.
  7. Peel and slice the pears, then place them in a bowl and sprinkle the flour as you toss the slices gently. Add cinnamon, sugar, lemon zest, juice and salt. Stir it gently.
  8. Spread the filling into the unbaked crust and bake for 35 minutes.
  9. Serve the pie warm with vanilla ice cream.
