Vegetable Overloaded Daal

Ingredients to make Vegetable Overloaded Daal

  • 1 and 1/2 cup tuwar daal
  • 2 tomatoes chopped
  • 1 onion diced
  • 1 tsp amchur powder
  • 1/2 tsp ginger, grated
  • 5-6 garlic cloves, finely chopped
  • Handful of finely chopped beans
  • 2 tbsp finely chopped cauliflowers
  • 2 tbsp finely chopped cabbage
  • 2 tbsp finely chopped lady finger
  • Small piece of jaggery
  • 1 tbsp bottle gourd
  • 1 tbsp capsicum
  • 1 tsp cumin seeds
  • 1/2 tsp red chilli powder
  • 1/2 tsp turmeric powder
  • 3 cups of water
  • salt to taste
  • Oil or butter as required

How to make Vegetable Overloaded Daal

  1. Finely chop all the vegetables and wash it nicely.
  2. Take a pressure cooker, add the daal including all the vegetables, then add water in it. Let 2 whistles blow, then lower the flame and simmer to cook for 2-3 mins.
  3. Heat butter in a pan to prepare the tadka, add the cumin seeds with a pinch of asafoetida, 1 chopped garlic and 1 onion. Saute and add the amchur powder and jaggery for taste, pour this tadka into the daal.
  4. Serve it with rice and roti.
