Sugar Free Banana and Dates Cake

Ingredients to make Sugar Free Banana and Dates Cake

  • 2 cups maida (U can use wheat flour too)
  • 20 dates (khajoor)
  • 250 ml milk
  • 2 tsp baking powder
  • 2 tbsp oil
  • 1 cup riped bananas
  • 1 tspn vanilla essence
  • 1/2 tsp baking soda
  • a pinch of salt
  • a pinch of nutmeg powder (optional)

How to make Sugar Free Banana and Dates Cake

  1. Remove seeds and soak dates in hot milk, when milk comes to room temp grind it in a mixie to make a smooth thick pulp.
  2. Preheat oven at 170 degrees C
  3. Remove this pulp in a big bowl, add vanilla essence, nutmeg, oil and mashed bananas to it and mix it well, i have delibrately kept some chunky pieces of banana for bite.
  4. Now sift in flour, baking powder, baking soda, and salt and gently fold the dry ingredients into the wet ingredients. Do not over mix, just fold it lightly.
  5. Pour it into a baking tray and make sure that the baking tray is greased and floured properly. Bake it at 170 degrees for an hour or until the skewer comes out clean.

My Tip:

U can also bake it in a cooker or utensil, just preheat it without salt, remove whistle and ring on high flame for 10 minutes, if using a vessel make sure it is closed properly with a lid, so there is no chances for hot air to go out. once it is preheated, keep the baking tin on metal plate inside the cooker or utensil and seal it again. lower the heat after 2 mins and let it bake for 45 mins then check, it the skewer.
