Expresso Chocolate Lava Cake

Ingredients to make Expresso Chocolate Lava Cake

  • 135 grams dark chocolate, chopped at room temperature
  • 100 grams salted butter
  • 100 grams icing sugar
  • 1 teaspoon expresso powder
  • 2 large sized eggs
  • 2 egg yolks
  • 40 grams all purpose flour

How to make Expresso Chocolate Lava Cake

  1. Preheat the oven at 200 degrees celsius.
  2. Grease the ramekins with melted butter and sprinkle some cocoa powder. Using a double boiler, melt the chocolate and butter.
  3. Take a medium sized bowl, add sugar and eggs. Beat until it's light and well blended. Now add the melted chocolate butter mixture to the eggs mixture.
  4. Beat for about a minute till it's well blended. To the about mixture carefully fold in the flour and mix till blended. Do not over mix it.
  5. Chill this batter for 10 mins.
  6. Pour this batter into the prepared ramekins. Bake for 20 - 25 minutes.
  7. Remove from the oven and allow to cool a little before serving.

My Tip:

You can use unsalted butter as well, in that case add 1/2 teaspoon salt to the batter. The cakes can be enjoyed as it is or with some vanilla ice cream.
