Chitti Burilu Besari/ Urad Vadi Curry

Ingredients to make Chitti Burilu Besari/ Urad Vadi Curry

  • urad dal - 1 cup
  • For the masala:
  • 2 onions
  • 1 tsp cumin seeds
  • 6 red chillies
  • Dry mango chunks 2-3
  • oil as required
  • salt to taste
  • mustard seeds 1 tsp
  • curry leaves 4-5

How to make Chitti Burilu Besari/ Urad Vadi Curry

  1. Soak the urad dal in water for 2 hours. Then soak the dry mango chunk in a cup of water too.
  2. Wash and grind the urad dal to form a nice thick paste with some salt. Keep it aside.
  3. Take a kadai, add some oil to heat. Then add the mustard seeds and curry leaves.
  4. Next add the grounded masala paste and stir fry for a minute. Then add in the mango chunks with the soaked water.
  5. Stir fry for this for a few minutes, then add 5 to 6 cups of water and salt to taste.
  6. Let it come to a boil, while it's boiling add small lumps of the urad batter into the curry. Let it simmer and cook for a while.
  7. Take out a wadi and check if it's cooked from the inside. Adjust the salt as per taste.
  8. Serve it with hot steamed rice.

My Tip:

1. While dropping small blobs of batter into the curry, you need a little patience and trials to get it right. 2. Take a lemon size of ball in your right palm and push out small blobs with the use of your thumb and index finger, this should help, please do not use a spoon. 3. Dry mango chunks are easily available in the market and is a must in this recipe. 4. The wadis are very small when dropped in and swell after simmering.
