ABOUT Mexican Rice with Cheese balls RECIPE

It's my family's all time favourite dish. The best part of it is , you can use leftover rice and you can prepare it in advance. Just set it in the baking dish and microwave at times of serving.

Ingredients Serving: 4

  1. For Rice...
  2. 2 cups basmati rice.
  3. 2 cups mix veggies(carrot,corn,flower ,beans,peas.. boiled kidney beans (optional )
  4. 2 onions
  5. 5-6 garlic cloves crushed
  6. Salt and red chilli powder as per taste. You can use red chilli paste.
  7. FOR GRAVY.
  8. 2 onions
  9. 3 Tomatoes
  10. 1 tbsp ginger garlic paste
  11. Dried oregano salt and red chilli powder
  12. FOR CHEESE BALLS
  13. 2 boiled and mashed potatoes
  14. 1 cup grated paneer
  15. 2 cubes processed cheese
  16. Chopped green chillies ( optional ) chopped coriander salt and black pepper as per taste, oil for frying.

Instructions

  1. Boil rice. Heat oil in pan add chopped onions, crushed garlic saut. Add boiled veggies , salt red chilli paste. Add rice saut and keep aside.
  2. For gravy, heat oil add chopped onions , chopped tomatoes, ginger garlic paste all masalas saut, add little water. And cook till gravy is done. Cool it and grind it. For cheese balls,. . Mix all the ingredients make small balls , or shape it like patties and deep fry. In a baking tray first put a layer of rice the cheeseballs and gravy, repeat the layers, on top add grated cheese and bake it for 15 to 20 min at 180°.
