Combine all the dry ingredients for the dough. Add ghee and water in parts to knead and form a semi- smooth dough. Add more water if required for the dough. Then cover the dough and keep it aside for 20 minutes.
Make a medium sized ball of dough. Roll it into 6 to 7 inches diameter disc on a dusted rolling board.
Roll into a thin paper size and apply the ghee and butter mixture liberally on the paratha disc. Sprinkle some flour on the top.
Cut it with a pizza cutter into very thin strips, then collect all the cut strips with a scraper .
From the edges, stretch and start to fold on the finger till the end. Roll the pleated edges tightly and join the edges.
Apply the ghee and butter mixture again, now roll into round parathas of about 4 to 5 inches in diameter.
Heat the tava, once it's hot place the paratha and cook. Turn the paratha once it is partly cooked, apply ghee on this side and cook for a minute. Turn the paratha again and once again apply ghee on the other side.
Flip again for a couple of times, till the parathas are browned evenly and well cooked. Press the sides with the spatula while frying the parathas. (alternatively, you could also add some ghee on the tava and then fry the lachedar parathas.)
Serve them hot.
