ABOUT Besan ki kheer/ Roasted Chickpeas Flour Pudding RECIPE

Kheer is a milk based pudding made by broken wheat, rice, rice powder, sabudana and vermicelli with sugar. It is flavored with sffaron, cardamom powder and chopped nuts. The kheer can be made for any festival. I'm sharing one of my recipe of 'Besan ki Kheer' which is quite simple to make. This is made from chick peas flour and it is delicious. It's made with Punjabi black chickpeas flour but here I have used normal gram flour.

Ingredients Serving: 6

  1. Milk 3 cups
  2. Gram flour 2 tbsp
  3. Sugar 2 tbsp or as per taste
  4. Luke warm water 1/2 cup
  5. Cashew nuts 1 tbsp, finely chopped
  6. Almonds 1 tbsp, finely chopped
  7. Pistachios 1 tbsp, finely chopped
  8. Chiraonji 1 tbsp
  9. Cardamom powder 2 tsp
  10. Desi ghee 1 tbsp
  11. Chopped nuts and chiraonji to garnish

Instructions

  1. Add ghee in a heavy heating bottomed pan. Roast the gram flour until a good aroma emanates. (Take care while heating to avoid burns.)
  2. Turn off the flame and add water. Mix it well and make sure there are no lumps of flour in it. Then turn on the heat, add milk, chopped nuts, sugar and cardamom powder.
  3. Allow it to boil for 10 to 15 minutes. Then turn off the flame.
  4. Garnish with nuts and serve it hot or chilled as desired.
