ABOUT Veg Noodles RECIPE

A very popular chinese recipe that is loved worldwide. Chinese dishes are usually cooked on a high flame, the veggies are sauteed on a high flame to achieve the perfect flavour.

Ingredients Serving: 3

  1. Water - 2 and 1/2 litres, approximately
  2. Noodles (I used Mama noodles)- 1 packet
  3. Oil- 1 tsp
  4. Salt- 1 tbsp
  5. Other Ingredients:
  6. Spring Onions- 2 sprigs
  7. Capsicum finely sliced- 3
  8. Carrots finely sliced - 2
  9. Cabbage finely sliced - 1 medium sized
  10. Ginger- Garlic paste- 1 and 1/2 tsp
  11. Oil - little less than 1/2 cup
  12. Salt- 1 and 1/2 tsp, according to taste
  13. Ajinomoto - 3/4 tsp
  14. Dark Soya Sauce- 2 tbsp
  15. Chilli-garlic paste - 1 tsp
  16. Black pepper powder - 1 tsp
  17. White vinegar- 1 tbsp

Instructions

  1. Add water in a pan and let it come to a boil. Once it starts boiling, add in the noodles. Stir well so that it doesn't stick at the bottom. Add salt and oil. (Make sure you cook it 80% otherwise you will get sticky noodles.)
  2. After it's cooked, sieve the water, then add the cold water so that the excess starch is removed, then sieve it again. Add a little oil so that they do not stick together.
  3. Heat oil in a kadhai, add the finely chopped spring onions. Saute it well, then add the ginger and garlic paste and saute again.
  4. Next add the capsicum and saute it for 3 minutes, then add the carrots and saute it again for 3-4 minutes. At last add the cabbage and saute for 3 minutes. (Note that all of this is done on a high flame.)
  5. Now add the ajinomoto, salt, black pepper powder, chilli-garlic paste and mix it well.
  6. Now add the vinegar and continue stirring it quickly. Add the soya sauce and stir it quickly again on a high flame for 2-3 minutes, otherwise the vinegar and soya sauce will give a sour taste.
  7. Lastly add the boiled noodles and mix it well with the help of a fork.
  8. The yummy veg noodles are ready to be served. Enjoy it with tomato sauce!

I tried the recipe but the noodles turned out very dry. Will try with more soya sauce next time. Any other suggestions?
