Cream Cheese

Ingredients to make Cream Cheese

  • Full fat milk - 2 litres
  • lemon juice - approx. 1 tbsp or as needed
  • salt - a Pinch

How to make Cream Cheese

  1. In a pan, add the milk and let it boil. After it starts boiling, add the lemon, within a few seconds the milk will cuddle and whey will be separated to get cheese.
  2. Seive it in muslin cloth and keep it for 15-20 minutes. (Don't throw the water.)
  3. In the food processor, add the cheese and salt. Blend until you get a soft and smooth paste. If it is still grainy in texture, add little of the cheese water left (whey) and blend it again.
  4. Within few minutes the cream cheese will be ready. (It can be preserved in the refrigerator for a week.)

My Tip:

1. Curd is also used with cheese while grinding. Then the mixture is kept in a muslin cloth for atleast 2 days. 2. Instead of whey, a spoon of heavy cream can also be added.
