Jalebi

Ingredients to make Jalebi

  • all purpose flour 1 cup plus 2 tbsp
  • water 1 cup
  • sugar 2 cups
  • water 1 and 1/2 cup
  • saffron few strands
  • ghee for frying

How to make Jalebi

  1. Make a smooth paste of the maida/flour and water (both in equal measures). Let this rest for 18-20 minutes.
  2. Heat 1 and 1/2 cup of water with sugar to make a thick sugar syrup. Then add saffron to this syrup.
  3. Take the jalebi batter, add 2 tbsp of flour and mix it very well.
  4. Now take the oil in flat bottomed pan and heat it on a medium flame till it is a little hot.
  5. Fill this batter into a squeezing bottle and make the jalebi in the pan. Let it turn crispy on one side, then turn it over and cook the other side as well.
  6. Remove the jalebis and soak it in the hot sugar syrup.

My Tip:

Note that the ghee should only be warm. Soak the jalebis in the sugar syrup. As soon as you remove it from the ghee, avoid contact with air. The syrup should be hot but not boiling. Syrup should be hot not boiling
