Khichdi Rolls

Ingredients to make Khichdi Rolls

  • Prepared Khichdi 2 bowls
  • chilli, garlic and ginger paste 2 tbsp
  • Chopped onions 2
  • Chopped tomato 1
  • Boiled corn kernels 1/2 cup
  • Bay leaf, clove, curry leaves, asafoetida for tempering (tadka)
  • Chopped coriander 1 tbsp
  • Garam masala 2 tsp
  • Red chilli powder 2 tsp
  • salt to taste
  • Syrup of sweet lime pickle 2 tbsp
  • oil to fry
  • Fresh bread crumbs 1 bowl
  • all purpose flour (maida) for covering
  • Mixed green salad and three coloured bell peppers to garnish

How to make Khichdi Rolls

  1. Heat some oil in a pan and add the cloves, bay leaf, asafoetida and curry leaves and prepare the tadka.
  2. Add the chilli, ginger and garlic paste to the pan. Then add the chopped onions and chopped tomato, saute it well.
  3. Next, add the boiled corn kernels, salt, garam masala, red chilli powder and sweet syrup of the lemon pickle. Then add the freshly chopped coriander, prepared khichdi, bread crumbs and mix it properly.
  4. Now pour in some water, along with the salt into the all purpose flour and make it into a paste (don't make it liquidy). Make cylindrical rolls out of the khichdi mixture and dip them into the paste of all purpose flour.
  5. Fry these prepared rolls in the hot oil till they turn golden brown in colour.
  6. Garnish with the green salad and three coloured bell peppers and serve.
