Ingredients Serving: 4

  1. Cauliflower florets - 1 cup
  2. Onion - 1, finely chopped
  3. Tomatoes - 2, pureed
  4. Capsicum, 1, finely chopped
  5. Turmeric powder - 1/2 tsp
  6. Red chilli powder - 1 tsp
  7. Coriander powder - 1 tsp
  8. Cumin powder - 1 tsp
  9. Garam Masala powder - 1/2 tsp
  10. Coconut milk - 1/2 cup
  11. Salt - to taste
  12. Cumin Seeds - 1 Tsp
  13. Oil for tempering

Instructions

  1. Blanch the cauliflower florets in boiling water (add a little turmeric powder and salt to the water) for a couple of minutes and strain them.
  2. In a pan, heat oil, add the cumin seeds and let it crackle.
  3. Then add the onions, green chillies and ginger-garlic paste and saute for a minute. Next, add the pureed tomatoes, red chilli powder, coriander powder, cumin powder and salt.
  4. Pour in a little water. Cover the pan with a lid and let it cook until the tomatoes are done.
  5. Add the cauliflower, capsicum and coconut milk. Bring it to a boil. Add the garam masala powder and let it simmer for a minute.
  6. Turn off the heat and serve it hot with rice/roti.
