Boondi Ladoo

Ingredients to make Boondi Ladoo

  • Besan/ chickpea flour 1 cup
  • Orange colour a pinch
  • Yellow colour a pinch
  • water (approximately 1-1/4 cup)
  • For the syrup:
  • sugar 1 cup
  • water 1/4 cup
  • ghee for frying

How to make Boondi Ladoo

  1. Mix the besan with water bottle little by little while making it of a flowing consistency. Make sure there are no lumps formed.
  2. Divide this batter in two, add the orange colour into one batter and yellow in the other.
  3. Make 1 string sugar syrup, take a laddle with small holes, so that the batter pours out in small boondi shapes
  4. Heat the ghee, check it's heat by adding a few drops, when it rises immediately it is perfectly done. While pouring the batter on the laddle, pat it's handle on the side of the kadai so that it drops separately in the kadai while making the boondi.
  5. Take out immediately, don't keep it more than 30 seconds in the oil or else it will become crispy.
  6. Next mix these boondis in hot syrup and keep it covered for an hour.
  7. Then apply ghee on hands and make small ladoos shapes. (About 18-20 ladoos will be made.)

My Tip:

Add 2-3 drops of lemon juice to the syrup, it prevents crystallization. You can also add magaz (musk melon seeds) in these ladoos.
