Oats Idli with Crispy Veggies

Ingredients to make Oats Idli with Crispy Veggies

  • 1 cup oats (dry roasted)
  • 1/4 cup semolina/ suji
  • 1 cup curd
  • water as required
  • salt according to taste
  • 1 packed Fruit salt/ Eno (Lemon)
  • Few curry leaves/ sweet neem
  • 1 tbsp rai/ mustard seeds
  • 1/2 tsp chat masala
  • 2 tbsp oil
  • 2-3 green chillies, chopped (as per taste)
  • For the veggies- (Cut all the veggies in julienne style)
  • 1 big sized onion
  • 1/2 capsicum
  • 1/2 cup cabbage
  • 1/2 carrot, chopped
  • 1 big sized tomato

How to make Oats Idli with Crispy Veggies

  1. In a bowl, soak the oats and semolina with salt and curd for 30 mins. (If required, add water according to the idli batter.)
  2. In a pan, heat oil and add in the mustard seeds. Once the seeds crack add in the curry leaves and green chillies.
  3. Now add in all the veggies one by one and stir fry. (Note to keep it crunchy and it should not be overcooked.) Add in the chaat masala and stir.
  4. Now, add one eno into the idli mixture and steam the idli in an idli maker or cooker. Use oil to grease the idli stand.
  5. Once the idlis are cooked, mix it with the crispy veggies and serve.

My Tip:

All veggies should be cut in the same style.
