ABOUT Lauki Raita RECIPE

Bottle gourd, a complete vegetable that you can make dal, rice, chapati, raita, with or even sweet as it always tastes good.

Ingredients Serving: 4

  1. 500 gm bottle gourd, grated
  2. 2 cups curd
  3. Sugar to taste
  4. Salt to taste
  5. Black salt 1/4 tsp
  6. Jeera powder 1/2 tsp
  7. Jeera/ Cumin seeds- 1/4 tsp
  8. Mustard seeds 1/2 tsp
  9. 1-2 Green chillies, chopped
  10. A bunch of coriander, finely chopped
  11. Oil as required
  12. Hing/ Asafoetida- a pinch
  13. Turmeric Powder- 1/2 tsp

Instructions

  1. Peel and grate the lauki, then wash it and pressure cook till 1 whistle blows with a little salt.
  2. In a bowl, put in the curd, then add salt, sugar, jeera powder and black salt.
  3. Next, wash the boiled lauki with cold water properly. Then add it to the curd mixture and mix it well together.
  4. To prepare the tadka, heat oil in a pan, then add in the mustard seeds, cumin seeds, green chillies, hing and turmeric.
  5. Then add this tadka to the curd and garnish it with coriander.
  6. Refrigerate it for sometime before serving.
