ABOUT Orange Soya and Coconut Cake- Athappokalam Style RECIPE

The cake resembles a floral decoration called Athappokalam that is made during the Onam festival. It is useful for lactose intolerant and vegans as well. Orange boosts the immune system, whereas Soya is rich in proteins and Coconut is useful for healthy skin, hair and weight loss.

Ingredients Serving: 8

  1. For the Cake Batter:
  2. Organic Whole Wheat Flour- 2 Cups
  3. Sugar Powder - 2.5 Cups
  4. Pure Cocoa Powder (without milk content)- 4 tablespoon
  5. Caramel Sugar - 2 tablespoon
  6. Orange Juice - 1/2 Cup
  7. Soya Milk - 1/4 Cup
  8. Orange Essence- 3 or 4 drops
  9. Margarine - 3/4 cup
  10. Vegetable oil - 2 tablespoon
  11. Baking Powder - 3 teaspoon
  12. Salt - 1/2 teaspoon
  13. Coconut Milk - 2 tablespoon
  14. For the Cake Dressing:
  15. Grated Coconut- 1/4 cup
  16. Grated Orange peel- 1 tablespoon
  17. Cherries- 15
  18. Almonds- as required
  19. Margarine - 2 tablespoon
  20. Sugar powder- 4 tablespoon
  21. Soya milk- 1 teaspoon

Instructions

  1. Sieve the whole wheat flour. Then add in the baking powder and salt into the flour. Now sieve it once again.
  2. Preheat the oven for 15 minutes at 180 degrees celsius.
  3. In the meanwhile, take a bowl, pour in the orange juice, margarine, coconut milk, soya milk, caramel sugar, orange essence and sugar powder. Stir it well so that there are no lumps/bubbles.
  4. Now slowly add in the prepared flour to this mixture and stir it properly. Note that no lumps are formed and blend the mixture thoroughly.
  5. Take the cake mould and grease it with vegetable oil. Then sprinkle some organic wheat flour on top.
  6. Transfer the batter into half of the greased mould. Bake it for approximately 45-50 minutes. Once baked, let it cool for a while.
  7. To prepare the icing, take a bowl, add in 2 tablespoon of margarine,1 teaspoon of soya milk, 4 tablespoon of sugar powder. Then bend it thoroughly.
  8. Apply the icing onto the cake with the help of a brush. Then drizzle the grated orange peel on top of the icing.
  9. Now garnish it alternatively with grated coconut, cherries and almonds. Cut into slices and serve.
