ABOUT Udiki chegodayaalu/ Rice flour snack RECIPE

A traditional yummy snack famous in Andhra pradesh. This crispy and crunchy ring is soft and spongy inside and is a very good accompaniment with hot tea or coffee. It's very simple to make. My mother would often make it in the evenings or when guests would arrive as a welcome snack. It could also make an awesome festive snack. We normally store home made rice flour. We can make this with store bought rice flour but my advice is to use home made rice flour.

Ingredients Serving: 4

  1. Rice flour - 1 glass
  2. Water - 2 glasses
  3. Split moong dal - 2 tsp
  4. Red Chilli Powder - 1 tsp
  5. Cumin Seeds - 1 tsp
  6. Curry leaves- few torn
  7. Turmeric - 1/4 tsp
  8. Salt to taste
  9. Oil for frying
  10. Sesame seeds for coating

Instructions

  1. Mix all ingredients with water except for the sesame seeds and rice flour.
  2. Keep it to boil. When it starts boiling, add the rice flour over the boiling water. (Do not reduce the flame)
  3. Do not stir it. Let it boil for another 2 to 3 minutes.
  4. Now take a heavy spoon and slowly stir it in one direction. (It will all come together like a spongy dough)
  5. Turn off the gas. Now apply oil to your palms and pinch a small lemon size ball.
  6. Roll it into a small 1/2 cm thick and 2 to 2 and 1/2 inches long stick on a plate of sesame seeds. Now join the two ends by pinching one onto the other end. Prepare all of it in the same manner.
  7. Deep fry 2-3 rings in hot oil at a time. Then remove them and place on a kitchen tissue to absorb the extra oil.
  8. Serve them hot with your evening tea.
