ABOUT Kanchipuram Idli RECIPE

This is a typical tamil Iyengar cuisine which one won't get it in any restaurant.

Ingredients Serving: 6

  1. Raw Rice 2 cups (Heaped)
  2. Urad daal 2 cups (Flat)
  3. 1 cup ghee
  4. Cashews 10
  5. Pepper 1 tsp
  6. Jeera 1 tsp
  7. Dry ginger powder 1 tsp
  8. Curry leaves a few
  9. Hing a pinch
  10. Salt as per taste

Instructions

  1. Soak the rice and dal for 3 hours, grind it coarsely adding less water. Allow it to ferment for a minimum of 12 hours. Give tadka in ghee by adding cashews, pepper, jeera, hing, dry ginger powder and curry leaves.
  2. Add this tadka to the batter, salt, 1 teaspoon cooking salt and mix well. Grease a tumbler or kattri, grease well with ghee, pour half of this mixture. Cook for a minimum of 35 to 40 minutes in a idli cooker.
