Coconut and raisin cupcakes

Ingredients to make Coconut and raisin cupcakes

  • maida flour - 1.5 cups
  • butter - 1/2 cup
  • sugar - 1 cup
  • eggs - 2
  • Baking powder - 1.5 tsp
  • Vanilla extract - 1.5 tsp
  • Milk - 1/2 cup
  • Raisin - 1 cup
  • coconut frosting :
  • Unsalted butter - 1/2 cup
  • Icing sugar - 1 cup
  • Grated or powdered dried coconut - 1/2 cup
  • Milk - 2 tbsp

How to make Coconut and raisin cupcakes

  1. The butter should be at room temperature and soft. Whisk it to make it light.
  2. Then add the sugar and whisk till it is creamy, then slowly add the eggs and vanilla.
  3. Sieve the flour and baking powder at the beginning and keep ready.
  4. Now add half of the flour into the butter mixture. Fold in gently. Then add the milk and fold. Finally add the remaining flour
  5. Add the raisins and pour the mixture into muffin tray lined with muffin liners
  6. Bake them for 18 minutes in a preheated oven at 180. Cool
  7. The butter should be soft and at room temperature. Whisk it till it is fluffy.
  8. Then slowly add the icing sugar and whisk till it is creamy. Add milk if the mixture is dry otherwise it can be avoided.
  9. Add some of the coconut powder into the frosting. Now pipe them onto the cooled cupcakes.
  10. Sprinkle the rest of the coconut powder on top and add a raisin as well.
