Spring Rolls

Ingredients to make Spring Rolls

  • 250gm Chicken (boneless)
  • 10 Spring roll wrappers
  • 4 Mushrooms finely chopped
  • 1/4 Cabbage shredded
  • 3tbsp Oil
  • 2tbsp Cornflour
  • 1tbsp Soy sauce
  • 1tbsp Chicken stock
  • 1 tbsp Water
  • Sugar to taste
  • Salt to taste

How to make Spring Rolls

  1. Soak the mushrooms in water for 30mins, drain well and shred. Dissolve some cornflour in water.
  2. Heat oil to smoking in a wok, add shredded cabbage and finely chopped onions, saute them for 3 mins.
  3. Add chicken and mushrooms and stir fry for 5-10 mins.
  4. Add soy sauce, sugar,salt and stock and stir fry for 3 mins.
  5. Add cornflour mixture to thicken and remove from heat.
  6. Divide the mixture into 10 portions and place each portion on the lower half of each wrapper. Roll the wrappers over the filling, tucking in ends into neat parcels.
  7. Deep fry rolls, in batches of 5-6, in hot oil for 5mins, until they turn into a golden brown colour.
  8. Drain and serve hot with chilli sauce.
