Ingredients to make Punjab Ka Swad, Sehat Ke Sath: Amritsari Chole, Multigrain Bhaturas, Imli Pyaz Chutney and Multigrain Kadda Prashad

  • Bhaturas: 1 :1:1:1 portion of oats wheat suji maida
  • 1 tbsp oil salt ajwain red chilli powder garam masala
  • Sour curd/buttermilk/drinking soda
  • Oil for frying
  • Amritsari Chole: Chole salt big cardamon heeng tea bag
  • Bay leaf clove pepper corns cinnamon zeera ajwain
  • 2 sliced onions and 2 tomatoes grated
  • Adjust quantity of Coriander pd red chilli pd zeera pd
  • Anardana chole masala salt
  • coriander and ginger juliens
  • oil for tadka
  • Masalas potatoes: boiled and cubes potatoes
  • Adjust quantity of Turmeric salt chili pd coriander pd
  • Garam masala 1 tsp oil for brushing
  • Imli/Onion chutney: Soaked imli
  • Salt lemon red chilli pd zeera pd lil sugar
  • 2 sliced chillies chopped onions coriander
  • Kadhha prashad: 3/4 katori multigrain Aata with choker
  • 1/4 broken wheat daliya
  • 4 katori water
  • 3/4 katori sugarcane powder/khand/sugar
  • 1/2- 3/4 katori desi ghee
  • few Soaked Raisins n sliced almonds

How to make Punjab Ka Swad, Sehat Ke Sath: Amritsari Chole, Multigrain Bhaturas, Imli Pyaz Chutney and Multigrain Kadda Prashad

  1. Bhaturas Take 1 :1:1:1 portion of oats, wheat, suji, maida....add 1 tbsp oil, salt, ajwain, red chilli powder, garam masala....rub the ingredients together. Now add sour curd/buttermilk or if you do not have then soda to knead a dough.
  2. Cover it wirh damp cloth and keep aside for 30 min. Roll balls and with oily palms flatten them and deep fry in oil.....I did with rolling pin only. **These bhaturas will not soak much oil...they will be light and crisp.
  3. Amritsari Chole Boil overnight soaked cholas with salt, big cardamon, heeng, and tea bag for 15-20 min.
  4. In a Kadhai, heat oil, add bay leaf,clove, pepper corns, cinnamon, zeera, ajwain. Add heeng and immediately sliced onions. Till they turn golden brown, add 2 tomatoes grated roast.
  5. Add masalas, coriander powder, red chilli powder, zeera pd, anardana, chole masala, salt. Roast till oil leaves. Add boiled n lil mushed chole and let it simmer for 5-8 min on low flame.
  6. off the flame, top it with airfried potatoes, coriander and ginger juliens.
  7. Masalas potatoes Peeled 2-3 potatoes and cut in 2-3 pieces only. Rub spices....turmeric, salt, chili powder, coriander powder, garam masala, 1 tsp oil and put in airfryer for 12 min at 180°. Add in Chole at the end.
  8. Imli onion Dip/chutney Soak imli for 30 min....mush and squeeze extract. Add salt, lemon, red chilli powder, zeera powder, lil sugar, 2 sliced chillies, chopped onions, coriander
  9. Multigrain Low Fat Kadhha Prashad In a pan boil water and once it boils add sugar and turn off flame. On the other side, in a wok dry roast aata, daliya
  10. Add ghee and nuts and roast a bit till aroma is there (remember that once you add water it will lighten in colour, so go accordingly)
  11. Now on low flame start adding water and stiring same time. Mix well so that no lumps are formed. Increase the flame and stir till ghee flotas on top and halwa leaves the wok and comes together.
  12. Top it with some more almonds and serve.

My Tip:

** Equal portion of oats, suji, aata and maida will give you healthy side of bhaturas. ** Dry Roast Aata, this will save your time of roasting with ghee later and is done quickly.
