Breakfast Fried Eggs and Sausage

Ingredients to make Breakfast Fried Eggs and Sausage

  • eggs - 2
  • Bologna Sausage or any other sausage of your choice- 4
  • onion (sliced) - 1
  • olive oil - 2 tsp
  • chilli flakes - 1/4 tsp
  • Black pepper (ground) - 1/4 tsp
  • Oregano - a pinch
  • salt as per taste
  • Tomato wedges and coriander for garnishing

How to make Breakfast Fried Eggs and Sausage

  1. Heat a medium skillet and add 1 tsp olive oil. Add the onions and cook till caramelized.
  2. Keep the onions aside.
  3. In the same pan, add another tsp of oil and sear the sausages.
  4. Make space for the egg and break it in the hot pan.
  5. Take the pan off heat.
  6. Layer the onions on top of the egg and season the dish with salt, pepper, oregano and chilli flakes.
  7. Finish the dish by baking for 10 minutes in a pre-heated oven at 200 C.
  8. Garnish with tomato wedges and few sprigs of coriander.

My Tip:

A little butter can be added for extra flavour. Serve with chilli sauce of your choice.
