ABOUT Almond and Coconut Pudding RECIPE

A simple and effortless creamy pudding, flavoured with coconut milk and almonds. This is perfect for a quick dessert fix.

Ingredients Serving: 4

  1. Coconut Milk 1 cup
  2. Almond Milk powder 4 tbsp
  3. Cornflour 1 tbsp
  4. Milk 1/4 cup
  5. Castor sugar 1/4 cup
  6. Vegetarian gelatin powder 1 tsp
  7. Water 2 tsps

Instructions

  1. Dissolve the vegetarian gelatin (Carrageenan) powder in the water.
  2. Set aside for 2-3 minutes.
  3. Mix the milk, cornflour and almond milk powder together.
  4. Mix all the remaining ingredients in a thick bottomed pan.
  5. Add the cornflour almond milk mixture. Place on medium heat.
  6. Add in the bloomed vegetarian gelatin once the mixture is warm.
  7. Whisk or stir continuously and bring the pudding mix to a boil.
  8. Reduce the heat to low and simmer for 3-5 minutes, until the pudding mix thickens a little.
  9. Pour the pudding mix into greased ramekins or cupcake molds. Allow to cool for 5-10 minutes.
  10. Refrigerate for 15-20 minutes and allow the pudding to set. Touch the top of the pudding to check if it is set.
  11. To unmold the pudding, ease the edges carefully with a blunt spatula and invert over a plate.
