Ingredients to make Coconut Chocolate Chip Cookies

  • 1 cup - wheat flour
  • 1 cup - all purpose flour
  • 3/4 cup - olive oil
  • 1 1/4 cups - Light brown sugar
  • 1/2 tsp - Baking Powder
  • 6 tbsps - milk
  • 1 cup - Toasted coconut flakes
  • 1/2 cup - Chocolate chips

How to make Coconut Chocolate Chip Cookies

  1. Place a pan on low heat.
  2. Toast the coconut until it turns light brown.
  3. Add all ingredients, except milk, to a bowl and mix well.
  4. Slowly add the milk and knead to a soft dough.
  5. Refrigerate for 20 minutes. Preheat the oven to 180 degree centigrade.
  6. Line a cookie sheet with parchment paper or foil. Remove the dough from the fridge, roll into balls.
  7. Flatten with your palms, place on the lined sheet and bake for 12-15 minutes (they may get done faster in your oven, so keep an eye on them)
  8. They may feel soft at the end of the 12-15 minutes, but they will turn crisp as they cool.
