ABOUT South Indian Coconut Rice RECIPE

Coconut Rice Recipe is a traditional rice recipe which is prepared even on festivals and is easy to prepare. It’s perfect for lunch box. Just have some grated coconut ready and then you are done.

Ingredients Serving: 2

  1. Cooked Rice : 2
  2. Cups Freshly Grated Coconut : ½ Cup
  3. Green Chillies : 2 Chana Dal
  4. (Bengal Gram) : 1 tsp.
  5. Mustard and Cumin seeds : 1 spoon each
  6. Curry Leaves : Few
  7. Red Chillies : 2 Optional
  8. Asafoetida : A pinch
  9. Salt : To taste
  10. Oil : 1tbsp

Instructions

  1. Heat oil in a pan and once hot add in Chana Dal followed by mustard and cumin seeds.
  2. Add in curry leaves, broken red chillies, asafoetida and fry for a minute
  3. Now add in sliced green chillies and fry for another minute
  4. Add in cooked rice , salt and mix well
  5. Finally add in grated coconut and mix well and simmer it until the rice becomes hot
  6. Serve hot with papads.
