ABOUT Fruit Cake RECIPE

It is Eggless, a very healthy and delicious cake. It has banana, coconut, orange zest, Tutti Fruitti, dry fruits like raisins, almonds, pistachios and cashewnuts.

Ingredients Serving: 4

  1. Maida 3/4 cup
  2. Whole Wheat 1/4 cup
  3. Coconut Oil 50 ml
  4. Sugar 100 gms
  5. Baking powder 1/2 tsp
  6. Baking soda 1/2 tsp
  7. Vanilla essence 1/2 tsp
  8. Milk 60 ml
  9. Banana 1 big riped
  10. Orange zest 2 tsp grated finely
  11. Coconut 3 tsp grated finely
  12. Tutti Fruitti 3 tsp
  13. Pistachios 3 tsp broken
  14. Almond 3 tsp broken
  15. Cashewnuts 3 tsp broken
  16. Raisins 3 tsp

Instructions

  1. Grease the cake pan with butter and set aside. Take the banana in a mixing bowl and mash it nicely with a help of a fork.
  2. Add milk, sugar and whisk nicely till the sugar melts. Add oil, vanilla essence and mix well.
  3. Add the flour, baking powder, baking soda over the wet ingredients and gently fold it and make a smooth batter without lumps.
  4. Add the grated coconut and orange zest to the batter. Mix well.
  5. Take 1 tsp flour and mix all the dry fruit nicely in the flour.
  6. Add the dry fruits to the batter reserving some for putting on the top. Mix well.
  7. Pour the batter over the greased cake pan. Sprinkle some dry fruits on top of the cake.
  8. Take the pressure cooker and place a separator or a stand for the cake pan on the bottom so that the cake pan does not directly touch the cooker bottom.
  9. Pre heat the pressure cooker on stove on medium heat uncovered for 5 mins. Remove the gasket and whistle from the cooker cover.
  10. Carefully place the cake pan into the pressure cooker. Cover it, simmer the heat and cook on a low heat for 30-40 mins.
  11. Start checking from 30 mins onwards. A tooth pick inserted should come out clean.
  12. Turn off the heat, remove the lid and let the cake be in the cooker for 5 mins.
  13. Now remove the cake from the cooker carefully. Invert the cake in a serving plate, let it cool down completely, cut and serve.
