Tom kha (chicken /shrimp coconut soup)

Ingredients to make Tom kha (chicken /shrimp coconut soup)

  • chicken broth - 3 cup
  • coconut milk - 2 cup
  • chicken or shrimp - 1 cup (soup size cut pieces)
  • lemon grass - 7 to 8 (coin size pieces) or 1 tbsp paste
  • ginger - 7 to 8 (coin size pieces)
  • lemon zest - 1 tbsp
  • diced mushroom - 1 cup
  • diced onion - 1/2 cup
  • diced tomato - 1/2 cup
  • fish sauce - 2 tbsp
  • lime juice - 2 tbsp
  • thai red chilli sauce/paste - 2 tbsp
  • salt to taste

How to make Tom kha (chicken /shrimp coconut soup)

  1. Wash and dry chicken /shrimp, mushroom, onion, tomatoes and dice them into 1 inches pieces.
  2. In a saucepan add lemon grass, ginger, lime zest along with the chicken broth and bring it to a boil.
  3. Once boiling, turn the flame to medium and simmer it to 5 minutes till the flavors get mixed well.
  4. After 7 to 8 minutes take the chicken broth and strain it to discard any solid.
  5. Put the strained liquid on the heat again and let it boil. Once it starts to boil add the mushrooms and meat.
  6. Cook for 2-3 minutes till the meat and mushroom both are soft.
  7. Add coconut milk and bring it to a boil.
  8. Once boiling, add onion, tomato and cook for 2 minutes on a medium flame.
  9. Turn off the flame and add lime juice, fish sauce, thai red chilli sauce and chopped coriander leaves.
  10. Yummy and aromatic Tom Kha is ready. Serve with garlic bread.
