Yummy Momos of Singhada flour (For Fasting). For this recipe I got best 'Innovation Recipe' prize from Masterchef Pankaj Bhadouria in 'City ki big thali' contest on Radio City.

Recipe Ingredients

  • Singhada flour- 1 cup
  • Sabudana 1/2 cup (soaked overnight)
  • Sendha Namak/Salt as per taste
  • Oil - 2 tsp
  • For Stuffing :
  • Paneer 1/2 cup (grated)
  • Carrot 1/2 cup (finely chopped)
  • Peanuts 1/2 cup (crushed)
  • Oil 2 to 3 tsp
  • Sendha Namak/Salt as per taste
  • Chopped green chilli 1/2 tsp
  • White pepper 1/2 tsp
  • Chopped green coriander
  • For Chutney:
  • Blanched Tomatoes - 2
  • Whole red chillies 5 to 6
  • Sendha Namak/Salt as per taste

Recipe Preparation

  1. Soak the sabudana for an hour at least and grind it properly to make a paste. Now knead a dough with sabudana paste and singhada flour.
  2. Place a pan on a stove and add oil. Add chopped carrots, cook it for 1 minute, add grated paneer and crushed peanuts. Mix well.
  3. Add green chillies, coriander, sendha namak and a little bit of white pepper. Mix properly.
  4. Turn off the gas and set aside to let the mixture cool.
  5. Now roll out the dough and add a tbsp of the stuffing in each and close it to form momos. Steam it in a steamer properly for 15 minutes.
  6. For Chutney: Take tomatoes, whole red chilli and salt. Grind it properly in a mixer grinder.
  7. Serve the hot momos with spicy tomato chutney.
