We Keralites cannot emphasize the importance of Coconut in our lives! It has been on my mind for some time to pair coconut with a favorite fruit of mine..yes the Avocado!!! It is such a deadly exotic combination that one cannot stop eating this cake.

Ingredients Serving: 15

  1. Recipe for the sponge cake:
  2. 6 eggs
  3. Sugar - 1 cup
  4. A pinch of salt
  5. 1/2 tsp baking powder
  6. All purpose flour - 1 cup
  7. Lime zest from 4 medium lemons
  8. Coconut cream - 2 tbsps
  9. For the Lime syrup:
  10. 1/4 cup lime juice
  11. lime zest from 3 lemons
  12. 3/4 cup water
  13. Pinch of salt
  14. For the Frosting:
  15. Avocado puree - 1 cup
  16. Coconut cream - 1/4 cup
  17. Cream cheese - 3/4 cup
  18. Whipped cream - 1 cup ( my cream was already sweet
  19. Sugar - 1/2 cup ( depends on how sweet you want the frosting adjust here
  20. A good pinch of salt.
  21. Toasted coconut

Instructions

  1. Method for the cake
  2. Preheat oven to 176 degree C. Beat the eggs with sugar till thick,pale and has doubled in volume. A dd salt and coconut cream. Fold in the sifted flour and baking powder gently trying not to beat the air out of the batter.
  3. Bake in three 6 inch round pans or in two 9 inch pans for 20 to 25 minutes till golden and springy to touch. Cool the cakes before frosting.
  4. For the lime syrup boil all ingredients and reduce to a syrup to moisten the layers of cake
  5. The frosting ingredients beat everything together to a smooth paste.
  6. Assemble the cake by brushing the cake layers one by one and filling and frosting the cake. The frosting could be a bit runny because of the puree and coconut cream but thats the fun bit.
