Bolo de rolo is a beloved fixture on the menus of most cafés, bakeries,restaurants, and even the airport in Brazil. It can be savored as a dessert or as a snack. It also happens to be the perfect companion for a cup of strong coffee.

Ingredients Serving: 10

  1. 250 gms Sugar
  2. 250 gms Sifted Flour
  3. 250 gms Butter, softened
  4. 5 Large Eggs at room temp.
  5. 1 tsp Pure Vanilla Extract
  6. A pinch of salt
  7. For filling-
  8. Guava paste/ Nutella/Dulce de leche/melted chocolate/Fruit preserve- 1/2 cup

Instructions

  1. In a clean and dry bowl beat the egg whites till they double in volume. The texture of the beaten egg whites should be such that it forms stiff peaks. Reserve.
  2. In a separate bowl, mix the sugar, the egg yolks and the butter till the mixture is pale yellow.
  3. Now, add the yolks, vanilla extract and salt into the cake mixture one by one. Add the beaten egg whites, the sifted flour and fold into the roll mixture gently.
  4. Divide the roll mixture in five and spread thinly into the shallow pans which should be lined with parchment. In a pre-heated oven(180 deg C), bake one cake at a time till very light golden.Do not overbake.
  5. In a clean kitchen towel turn out the warm baked cake. Trim the borders of the cake. Spread a layer of whatever filling you are using and wrap quickly, with the help of the towel. Repeat the same process, until the last layer.
  6. After 20 minutes, unroll towel.Place the roll on a serving dish, slice and serve with a cup of cofee.
  7. I used Nutella for the filling.You can make Guava paste at home by boiling down Guavas with sugar till thick. Strain and use.
