ABOUT Bhetki (barramundi) fish paturi RECIPE

Bhetki paturi,this is one of my favourite fish preparation and is an authentic Bengali dish where marinated fish cooked inside the banana leaf.

Ingredients Serving: 3

  1. Bhetki -cut into 6pieces(though i have given the picture of 2,but i did more than 2)
  2. Black mustard seed 1tbsp
  3. Poppy seed 1tbsp
  4. Grated coconut 2cups
  5. Turmeric powder 2tsp
  6. Green chili 7-8
  7. Lemon juice 1tbsp
  8. Mustard oil 3tbsp
  9. Banana leaves as required
  10. Thread as required
  11. Salt to taste

Instructions

  1. Wash and clean bhetki pieces and rub lemon juice and salt.Leave those for 5/6 hours in a refrigerator.This step is important to get soft paturi.
  2. Make a paste of mustard seeds,poppy seeds and grated coconut by adding little salt
  3. Make a paste of green chilies also
  4. In a bowl take mustard paste,poppy paste,green chili paste,coconut paste,turmeric, mustard oil and a little bit of salt.Mix those properly.
  5. (Take the fish bowl out of the refrigerator at least one hour before cooking)
  6. Marinade the fish chunks with the paste mixture and leave them for more or less 15/20 minutes.
  7. Take a banana leaf, cut into 6"/6" pieces
  8. Brush little oil on the glossy side and lightly roast over low flame for about 5/10 seconds.
  9. Then take a piece of leaf and place a fish chunk and put some marinade to cover the fish properly from every side.
  10. Apply the same process for rest of the chunks.
  11. Fold the banana leaf from four side and make a parcel like shape and then tie with a thread.
  12. Take a pan ,put some mustard oil and a little bit of water.Then place fish parcels and cover with a lid.cook it in a low flame for 5/7 minutes.
  13. After that flip all the parcels and cook the other side.
  14. Finally,bhetki paturi is ready to serve with steamed rice.
