Ingredients to make Baked pakoda punjabi besan kadhi

  • For kadhi :
  • besan 1 cup
  • Yoghourt 4 cups
  • turmeric powder 1 tbsp
  • Degi mirch 1 tsp
  • methi seeds 1 tsp
  • hing a pinch
  • methi leaves 1 tbsp
  • curry leaves 8-9
  • green chillies slit in halves 3-4
  • oil 1 tbsp
  • salt to taste
  • water 6-7 cups
  • Special masala :
  • Long pepper 1cm long
  • cinnamon stick 1"
  • cloves 2-3
  • black cardamom 2
  • Green cardamom 2
  • nutmeg powder a pinch
  • For pakodhas :
  • besan 2 cups
  • Roughly chopped onions 2 cups
  • green chillies chopped 3
  • anardana powder 1/2 tsp
  • coriander powder 1 tsp
  • ginger chopped 1 tbsp
  • turmeric powder 1 tsp
  • oil 1 tbsp
  • Ajwain 1/2 tsp
  • Yoghourt 2 tbsp
  • salt to taste
  • water to make semi dough like batter
  • oil for frying

How to make Baked pakoda punjabi besan kadhi

  1. Dry roast the special masala ingredients and powder them
  2. In a large bowl ,pour in yoghourt,powdered specialmasala ,turmeric,degi mirch, Salt ,whisk it so that no lumps remain,now add water and mix
  3. Heat oil in a pan, add methi seeds , when they turn brown take out the seeds as they taste bitter.
  4. Add to oil hing,curry leaves,green chillies and Besan batter ,bring to boil then cook at low heat stirring occasionally till done
  5. FOR PAKODHAS
  6. In a bowl mix together,besan ,salt, turmeric, ginger, yoghourt green chillies,ajwain, onions , anardana,coriander powder ,oil , adjust the consistency by adding water( if baking ,keep batter little hard)
  7. Can deep fry the pakodas as well bake them at 180° C,pre- heated oven for 20 minutes
  8. When pakodas are done and curry is also ready then put in the pakodas to curry,add methi leaves and cook for 5-8 minutes at high heat

My Tip:

Cook kadhi till besan is properly cooked ,it will take approx. Half hour. If kadhi is too sour then add sugar 1 tsp to balance the flavours.
