Veggie Lentil Coconut Stew

Ingredients to make Veggie Lentil Coconut Stew

  • Broccoli ( Bite size florets) - 1 cup,
  • coconut milk - 2 cups,
  • Sliced capsicum (deseeded) - 1/2 cup,
  • Chopped French beans - 1/2 cup,
  • Chopped Greens- 1 cup,
  • olive oil - 1 tablespoon,
  • onion - 1,
  • Small sized tomatoes - 3,
  • Lentils (Bengal gram) - 1/2 cup,
  • cloves- 2,
  • Sliced ginger - 1/2 teaspoon,
  • pepper powder-1/2 teaspoon,
  • cumin seeds - 1/2 teaspoon,
  • green chilly - 2,
  • Vegetable Stock- 3cups
  • water - 1.5 cups
  • turmeric powder- a pinch,
  • salt - To taste.

How to make Veggie Lentil Coconut Stew

  1. Soak lentils for 1 hour and boil them. Note that they should be tender. Keep it aside.
  2. Preparation of Vegetable Stock - Take a saucepan pour three cups of water. Add all the vegetables and parboil them by adding salt ,turmeric powder and sliced ginger to it.
  3. Once parboiled , strain the stock and discard the vegetable solids.
  4. Preparation of Stew - Add the boiled lentils to the parboiled vegetable mix. Stir well.
  5. Take a pan, heat olive oil on low flame. Add cumin seeds , onions. Fry them till they turn translucent.
  6. Now add the boiled vegetable mix along with lentils , vegetable stock and cook for 5 minutes.
  7. Then add the chopped greens.Let it boil for a minute so that they do not overcook and maintain their color too.
  8. Once boiled, add the coconut milk, pepper powder,cloves ,slit green chilly and salt. Stir well combined. Allow it to cook for 5 minutes.
  9. Transfer the veggie lentil coconut stew in a plate by using a ladle.
  10. Serve warm with Bun/Bread. It tastes fantastic with Chapati too.

My Tip:

Do not overcook coconut milk as it will be curdled.
