Yummy Enchilada

Ingredients to make Yummy Enchilada

  • rajma red and small one 150 gm
  • white part of spring onions 10 sprigs
  • 8 pods of finely chopped garlic,
  • 2 capsicums finely chopped
  • 1 tsp pepper powder
  • 1 tsp red chilly powder
  • salt to taste
  • makka four + rice flour rotis 8
  • For Sauce, take Oil 2 tsp, Burnt fry 1 red capsicum, Add 2 chopped onions, 8 garlic pods, 2 whole red chillies, 3 tomatoes chopped, 2 capsicums chopped, Pizza sauce 2 tsp 2 tsp ketchup 2 tsp red chilly powder Salt Stir fry everything till cooked. Blend in mixer Boil it for 2 minutes.

How to make Yummy Enchilada

  1. Rajma red small ones. Cooked till very soft and mushy. Stir fry white onions of spring onions cut finely. Add 8 pods of finely chopped garlic, Spring onion 3 tbsp finely cut. Add 2 capsicums finely chopped. Add 1 tsp pepper powder, 1 tsp red chilly powder ,Salt. Stir fry for 8 minutes.
  2. Add Cooked beans stir fry for 2 minutes. Mash it.
  3. For Cover we are using maake ki roti instead of tortillas.
  4. Prepare the sauce as directed.
  5. For sauce take 2 tsp oil in pan, Burnt fry 1 red capsicum, Add chopped 2 onions, Garlic 8 pods, 2 whole red chillies, 3 tomatoes chopped, 2 capsicums chopped ,Pizza sauce 2 tsp, 2 tsp ketchup, 2 tsp red chilly powder and Salt.
  6. Stir fry everything till cooked.
  7. Blend in mixer. Boil it for 2 minutes.
  8. On makke ki roti line up stuffing. Fold half and tava fry it.
  9. In a baking tray add half folded rolls. Spread hot sauce on it. Dress it with grated cheese on each piece. Preheat oven for 10 minutes on 170 degree. Bake it for 5 to 8 minutes till cheese melts. Serve hot.

My Tip:

If you don t have OTG you can do this recipe in a shallow pan also. Grease with oil. Cover it and cook till cheese melts.
