Corn vegetable rice

Ingredients to make Corn vegetable rice

  • rice 2 cups
  • water 4 cups
  • Desi ghee 4 tbsp
  • cumin seeds 1 tsp
  • bay leaves 2
  • Black cardamoms 2
  • cloves 3-5
  • green chillies chopped 2
  • French beans chopped 1/2 cup
  • peas 1/2 cups
  • cauliflower cut in small pieces 1/2 cups
  • carrots chopped 1/2 cups
  • Sweet corn 1/2 cups
  • onions chopped 1/2 cup
  • capsicum chopped 1/2 cups
  • ginger finely chopped 2 tbsp
  • coriander leaves 2 tbsp
  • salt to taste

How to make Corn vegetable rice

  1. Add all vegetables in a pressure cooker (except for onions,capsicum , ginger and coriander )and cook till 2 whistles
  2. Heat oil ,add cumin seeds,bay leaves, cardamom,cloves,chillies, Ginger then add onions and capsicum saute till done
  3. Add in boiled vegetables, rice , water and salt, cover and cook
  4. When it starts to boil turn heat to low
  5. If all water is absorbed then add coriander leaves and turn off the heat

My Tip:

The remaining water after boiling vegetables can be added to messure 4 cups water to cook rice .
