Vegetable Malai kofta

Ingredients to make Vegetable Malai kofta

  • potatoes boiled 3 medium sized
  • French beans , carrots, finely chopped 4 tbsp
  • Boiled and mashed peas and corn 4 tbsp
  • onion paste 1 cup
  • cream 1/2 cup
  • Milk 3 cups
  • tomato paste 3 tbsp
  • green chillies chopped 2
  • almonds and cashews slices 2 tbsp
  • malai 3 tbsp
  • raisins 2 tbsp
  • ginger garlic paste 1 tbsp
  • Tumeric powder 1 tsp
  • Degi mirch 1 tsp
  • Green cardamom 3-4
  • cinnamon 1 " stick
  • coriander powder 1 tsp
  • Garam masala 1/2 tsp
  • coriander leaves 2 tbsp
  • oil 2 tbsp
  • salt to taste
  • oil for frying

How to make Vegetable Malai kofta

  1. Mash boiled potatoes and mix with carrots ,beans corn , peas ,salt
  2. After applying oil on hands , take about 2 tbsp of potatoes and flatten on hand then add in centre little bit of malai , cashew, Almond , a raisin, and chopped chilli to taste,then fold from sides and shape to make kofta
  3. Repeat the above step to make more kofta balls with mixture
  4. Heat oil and fry koftas till golden brown
  5. In another pan heat 2 tbsp oil add cumin seeds,cardamom,bay leaves,cinnamon,turmeric Degi Mirch, ginger garlic paste ,onion paste Cook for five minutes
  6. Add tomato paste saute till oil separates ,add garam masala
  7. At low heat add cream, mix and then add milk stir well add salt, coriander powder after a boil add koftas and coriander leaves

My Tip:

:eight_pointed_black_star:If added early, Koftas absorb all gravy and also becomes too soft, so add them only before serving. :eight_pointed_black_star:If you notice curdling of milk dont panic just take out whole masala ,then with your blender just give a churn ,and the gravy will be creamy and ready for koftas to be added.
