Stuffed Potato Skins with Nutrela chunks and Cheese

Ingredients Serving: 2

  1. 1 cup minced soya chunks (Soak the soya chunks for 10 minutes squeeze excess water and grind it)
  2. 1 tbsp butter
  3. 2 tbsp olive oil
  4. 1 tsp pepper powder
  5. 1 tsp chilli flakes
  6. 4 garlic pods
  7. Salt to taste
  8. 1 tsp pizza seasoning
  9. 1 block Amul cheese
  10. 2 tbsp powdered walnuts

Instructions

  1. Preheat the air fryer to 180 degree for 5 minutes.
  2. Pierce the potatoes with a fork.
  3. Bake potatoes at 180 degree for 15 minutes or until tender.
  4. Let the potatoes cool for 30 minutes.
  5. Heat the pan, add butter, finely minced garlic and fry till golden brown in color.
  6. Add minced Nutrela chunks, stir, add pepper, chilli flakes, salt and pizza seasoning. Stir well.
  7. Add powdered walnut, stir and cook on a low flame without adding a water till brown and crisp. Keep aside.
  8. Cut potatoes lengthwise into 4 wedges.
  9. Scoop out as much potato pulp as possible without tearing the potato skin.
  10. Reserve potato pulp for another use.
  11. Arrange potato skins on foil lined sheet.
  12. Coat both the side of the potato skins with olive oil, sprinkle evenly with pepper and salt.
  13. Bake at 180 degree for 8 to 10 minutes or until lightly browned.
  14. Add minced soya chunks and spread cheese on top of the potato skins.
  15. Bake an additional 5 minutes or until cheese melts.
  16. Serve hot, yummy and tasty stuffed potato skin is ready.
